Wash the green leeks properly and cut away the roots and the bulk of the dark green parts. Cut lengthwise longways then into half-inch rounds. Place in a large skillet and cover with fresh water, then simmer over a moderate heat for about twenty minutes or until tender.
Strain the cooked leeks and put in a large mixing bowl with the beef, eggs, crumbs, dill, parsley and paprika and spice well with salt and pepper. Stir completely using your hands then mold a couple of tablespoonfuls into a croquette, pressing a bit. Put on a tray and continue for the balance of the ingredients.
Preheat cooking oil in a pan to a amount of about 2 centimeters over a medium flame. When the heated oil is hot, cook the croquettes in small groups until golden on each side. (Do not fill the pan as this lowers the heat of the cooking oil.) Transfer the finished croquettes to a plate lined with paper towel and allow to rest.

In a large frying pan over moderate heat, heat olive oil to a amount of about 1 centimeter. Cook the fritters a few at a time for a couple of minutes per side, flipping so they are crispy completely, then place on absorbent paper.
Present with lemon slices.
